Vendakkai Masala (Okra/Bhindi in Spicy Gravy) suits well with rice and chappati. Okra tastes delicious in this hot spicy gravy.
Okra is known as Vendakkai in Tamil and as Bhindi in Hindi.
Okra plant is shown below.
Ingredients
- Okra – 500 gram
- Red chilli powder, Turmeric powder – each ½ tea spoon to fry okra
- Salt – as per taste
- For gravy
- Onion – 6 no

- Garlic – 6 cloves
- Green chilli – 4 no
- Tomato – 3 no
- Ginger – one inch long
- Tomato puree – 2 table spoon
- Turmeric powder – ½ tea spoon
- Kashmir chilli powder – 1 table spoon
- Coriander powder – 2 table spoon
- Pepper powder – 1 tea spoon
- Roasted cumin powder – ½ tea spoon
- Garam masala powder – 1 tea spoon
- Salt – as per taste
- Oil – 3 to 4 table spoon
- Onion – 6 no
- For seasoning
- Fennel seed – 1 tea spoon
- Clove – 4 no
- Cinnamon stick – 2 inch long
Method
- Wash and cut okra into 2 inch long pieces; chop onion, ginger, garlic, green chilli to fine pieces (I did it in food processor).
- Grind tomato to a fine paste; crush cinnamon and cloves slightly to give nice flavor to the gravy.
- Okra fry: Heat a non-stick or any pan with 1 table spoon of oil; add okra, given spices for okra and fry till cooked and crisp.
- Gravy for Okra: Heat another pan with remaining oil and do the seasoning; add all chopped items, salt and fry till onion is red in colour.
- Add all dry spices, ground tomato paste and fry well till oil separates from the gravy.
- Add little water if needed; now add tomato puree and fry till the gravy is fried well for colour, flavour and good taste.
- Now add fried okra in the gravy and mix.
- Serve hot with steamed rice or chappati.
